2. Apply the rib rub evenly over the spareribs and place them on the grill. 3. Smoke for 3 hours. 4. In a saucepan on medium low heat, combine glaze ingredients and let simmer for an hour. Once the jelly has liquefied, use a stick blender to emulsify the sauce. Set sauce aside until ready to use. 5. Wrap the ribs in heavy-duty aluminum foil and place them back in the smoker, meat side up. Cook for 2 hours. 6. Unwrap the ribs and cook for 1 hour. Baste the ribs with the apple habanero glaze every 15 minutes.

Using the 3-2-1 method (see page 7), smoke the ribs for 3 hours. 5. Tear off a sheet of heavy-duty aluminum foil to wrap the ribs. In the center of the foil, add the Foil Wrap ingredients. 6.
